Every morning needs to start with a cup of good strong coffee in our house, but especially Mondays. So in the name of solidarity for my friends out there who are with me on suffering from a severe case of the Mondays, I thought I’d share with you, my favorite coconut oil coffee recipe.
When I started drinking coffee I would only drink the sweetest of the sweet. Anything less than a good old cup of sugary goodness was undrinkable to me. Then I had baby weight to lose and realized coffee creamer was one of the culprits of added sugar in my diet.
Not to mention traditional coffee creamer doesn’t always have the best of ingredients in it, so unless it’s Natural Bliss creamer (which we do buy from time to time), my coconut oil coffee creamer is my go to morning recipe.
So now why do you add the coconut oil?
The coconut oil gives the coffee a buttery smooth texture to it without affecting the taste. It also is a superfood packed with loads of health benefits, even in small quantities. So adding to a cup of coffee is a great way to boost your coffee game and your health!
But what I really love about this creamer is that it’s all natural, sugar-free, dairy-free and yet it still tastes delicious. And while it’s not as sugary as my original cups of coffee were, it didn’t take long for me to adjust to a less tooth decaying level of sweetness that I had originally been consuming. And now I actually prefer this healthier alternative!
What you’ll need:
- Coconut oil
- Sweetener of choice (we do stevia)
- Pumpkin spice
- Sugar-free vanilla almond milk
- Small mason jar
Start by brewing your favorite coffee like normal. When it’s ready, fill the mason jar with the coffee leaving about a quarter of an inch left to fill at the top.
Then you add a tsp of coconut oil, a dash of pumpkin spice, and two tsp of stevia. Then pour in almond milk to fill the mason jar the remainder of the way.
Place the lid back on top of the mason jar, and make sure it is secure. Because now you get to have a quick upper body workout while you shake the mason jar to get everything nice and frothy! It takes less than a minute.
Side note: stirring won’t work for a frothy coconut oil coffee. The key to this morning goodness is to be shaken…not stirred. 😉
Then you get to just pour it into your favorite mug and enjoy!
Simple, healthy and delicious…that’s a pretty good way to help fight a nasty case of the Mondays if you ask me.
