I know, we’re all groaning because it’s Monday. But I’m here to squash those Monday blues by sending a whole plate full of sunshine vibes and pineapple sweetness your way. What the heck are you talking about Allie? I’m talking about how I’m sharing with you guys one of my favorite summertime dinner staples: my crockpot Hawaiian chicken. It’s guaranteed to have you feeling all kinds of sweet summertime feelings.
Something about playing in the pool all weekend (cross that off my summer bucket list), and having plenty of fresh pineapples on hand lately had me thinking it was definitely time to break out this dinner favorite.
It’s great because not only does it involve pineapple (although pineapple alone makes anything awesome), but also because it involves almost ZERO effort to make.
And you guys know how much I love my easy recipes! This one is perfect for those dinners where you don’t have the time or desire to worry about dinner. You throw a few ingredients in your ever faithful crockpot and then forget about it!
And that’s my kind of dinner!
Crockpot Hawaiian Chicken
What you’ll need:
- 3-4 boneless skinless chicken breasts (we did 3 because of the size of our crockpot)
- 2 cups of pineapple chunks or 1 can of pineapple chunks drained
- 1 bottle of BBQ sauce
- a crockpot…kind of important
- Place your chicken breasts in your crockpot.
- Pour BBQ sauce over chicken and then add your pineapple
- Let cook on low for 6-8 hours
- Salt and pepper to taste
Throw some rice and mixed veggies together and you my friends have a perfect summertime dinner! Oh, and did I mention this chicken is also AH-MAZING on a sandwich the next day? Well, I’m not sayin’…I’m just sayin’…
